What To Do With All That Roast Beef
Jose Mier Gastronomy is in the same position as you. We’ve got a lot of leftovers from Christmas dinners as well as New Year’s celebrations. One of the things we have on hand is a lot of roast beef, so what’s a person to do with all of that meat?
I’ve scoured the Internet looking for recipes to make use of leftover roast beef. You can search yourself and are likely to find many recipes for things like sliders, French dip and burritos. But I found one on thespruceeats.com that really made an impression on me. It’s a roast beef casserole that not only looks good it’s very simple to prepare.
All you’ll need is some peas and carrots, onions, your roast beef of course, and some cheddar cheese. After simmering the vegetables until cooked you combine them with your roast beef and put it into a roasting pan, top with cheddar cheese and bake until cheese is bubbly. This is comfort food at its finest in a great way to use up all the leftover roast beef you may have on hand. Your family, who is probably getting tired of aating the same old slices of roast beef every night, will thank you for it.
Of course there are some of you who may not have had roast beef for Christmas or New Year’s and perhaps reading this just giving you a hankering for some roast beef. I to like to go out for roast beef every so often and here in Sun Valley, California I like to frequent big Jim’s Family Restaurant which is located at 8950 Laurel Canyon Blvd.
If you’re not going to dine out however, give this recipe a try and let me know what you think. By the way, happy new year!
