Mochi doesn’t always have to be used like it is in this dessert but this is probably the most well-known use of it especially here in United States. The glutenous rice cake is gummy and chewy and when it surrounds a ball of ice cream the combination is outstanding.

These used to be kind of a delicacy that you could only find an Asian markets but now I’ve seen them in my local grocery store.
